Balah al sham is a much-loved Levantine sweet made from a choux-style dough that’s piped into ridged fingers, deep-fried until deep gold, then soaked in a light rose or sugar syrup. The ridges are the secret — they hold the syrup and give that signature crisp-then-tender bite. The name means “dates of the Levant,” a nod to its shape.
